Start Training Your Stomach Now for the Restaurants Opening at Aria

We know, we know. The upcoming opening of CityCenter has everyone worked up in a tizzy (us included). The list of stuff we’re looking forward to is waaay long, but since we’re all about food and drink, let’s talk restaurants for a sec.

We've already listed all the restaurants that will be in CityCenter next month but today we decided to focus on the hot tables at Aria. All of the restaurants are opening during CityCenter’s grand opening weekend on December 16, 2009. We’ll start dishing specifics – menu, décor, staff selections, etc. – once it gets closer to the time, but in the meantime, here are some some openings to put on your radar:

We’re pretty happy that we will no longer have to make the cross-country schlep to the Big Apple for Chef Masa Takayama’s sublime Japanese cuisine. He’s opening Bar Masa, and Shaboo, a more exclusive space within the space where each table will have its own induction cooking element. DIY food, yay!

Michael Mina, the mastermind behind Vegas dining boîtes, Nobhill, Seablue, Michael Mina and Stripsteak (mmm…duck fat fries), will head up American Fish. Here’s are the PR deets:

Mina will draw inspiration from the bounty of American lakes, rivers and coasts, with a menu featuring refined American cuisine. Many products will be purchased directly from fishermen, farmers and ranch.

We’re guessing it’s not exactly a sustainable endeavor, but what is really in Las Vegas, except for Rick Moonen’s rm seafood? All hail the almighty power of FedEx.

Similar to the sense-seducing, chocolate fountain flowing bakery café at Bellagio, a Jean-Philippe Pâtisserie outpost will woo sweet tooths (teeth?) with breakfast pastries, sandwiches, signature chocolates, crêpes, salads and paninis. One of our fave take-home items to gift and just in time for holiday shopping.

Jean-Georges Vongerichten is stepping up the steak factor in Sin City with Jean Georges Steakhouse. Imagine a non-stodgy classic steakhouse experience coupled with classic cocktails. Umm…the best of both worlds? We shared grilled cheese sandwiches with J-G at an after-hours party at Aspen Food & Wine Classic a few years back and cannot say enough nice things about this down-to-earth chef. We can’t wait to see him have his way with cow at ARIA.

ARIA is currently accepting reservations for Dec. 17 and beyond. Nightly room rates range from $179 to $799; suites range from $500 to $7,500.
