Gagnaire has been working on the restaurant for the past three years, but s’il vous plaît, don’t call it a brasserie. Instead, he prefers to call Twist a “gastronomic restaurant.” Hello, serious foodies! According to the New York Times:
"When you’re going to Gagnaire," Patricia Wells, the author who runs a Paris cooking school, said of his previous restaurants, "you fasten your seat belts, it’s going to be a bumpy night."
His cooking has been noted for occasionally iconoclastic — and usually playful and unpredictable — experiments in taste, color, texture and ingredient selection.
Prices at the 72-seat restaurant will run around $135 per person (wine included) and remember, rooms are still rather do-able with the MOLV's "We Fan Vegas" offer which gets you one night free.
