Scarpetta Could Open in Las Vegas in May 2011

Part of our job over at HotelChatter.com involves stalking new hotels and trying to guesstimate when they are going to open (and sometimes, if they are ever going to open at all.)
We were doing such a thing the other week in sussing out the opening date for the new Thompson Toronto Hotel which also had us digging deep on the hotel's interior designer's website, Studio Gaia. Long story short, in surfing through the company's upcoming projects we noticed this listing for Scarpetta, April 2011.
If you aren't familiar with Scarpetta it's a well-respected (three stars from the NYT) and popular Italian restaurant in NYC helmed by chef Scott Conant. Thompson Toronto is getting one in May or June or so. And now it looks like we might be getting one in April of next year.

We tried like mad to suss out exactly where Scarpetta would open but despite many renderings, we've come up short. Although one of the renderings did show a shot out of a window where we could see Caesars Palace shining bright.
We would say CityCenter because there's a lot of space over there but the NY Post has speculated that it's happening at the The Cosmopolitan. Since that hotel won't be opening until end of 2010, at the earliest, we agree that could be the joint.
Interestingly, Studio Gaia is also working on a restaurant, Sugo, which will open in April 2011. Judging from those renderings (again, found under In Development on StudioGaia.com), it looks to be a bakery attached to Scarpetta. Very cool.
