Woohoo, Javier's is Coming to Aria! Wait, Who is Javier?

This morning, we received a very excitable press release hyping the announcement that Javier's would be joining the culinary funhouse of Aria later this summer (taking the space of the just-closed Union). The only problem was, we didn't know who Javier was. Oops?
As it turns out, Javier is Javier Sosa, the chef behind a "favorite hot spot for those in-the-know in Southern California and Los Cabos, Mexico." We guess we're not in-the-know as we've never been to Javier's before, not to the two locations in Orange County nor the one down in Los Cabos. Nevertheless, the fare is described as regionally-influenced Mexican cooking.
So, in short, Las Vegas is getting another Mexcian restaurant.
Javier's, thankfully, will be a tad higher-end than the rest of the Mexican eateries along The Strip as the interiors will be done by in-demand hotel designer, Dodd Mitchell and we presume/hope the food quality will be slightly higher grade as well. Of course, there will be no shortage of tequila and margaritas. (Hand-shaken, apparently.)
While Javier's might not be the same caliber as other chefs at Aria like Julian Serrano or Jean Georges Vongerichten or Michael Mina, we have been looking for something to replace Dos Caminos. Too bad we have to wait about six more months.
